CAULIFLOWER TORTILLAS

Ingredients
- 125g Cauliflower, raw
- 50g Eggs, whole, raw
Instructions
- Start by 'ricing' the cauli on a grater.
- Pre-heat oven to 190c/ Fan 170c/Gas 5
- Line a baking tray with a silicone mat or non-stick bacofoil
- Place the cauliflower in a small basin and microwave for 2 mins
- Stir and microwave for another 1.5 mins
- Stir. Add beaten egg & some seasoning. Mix well
- Place on the baking tray in 4 equal circles (it seems to find it's own level very easily)
- Bake for 8 mins remove from oven, turn them over and bake again for another 5-7 mins
- Heat a dry frying pan and add the tortillas press them down this helps to give a bit of crispness
- When using them as part of a meal you can use some of the fat allowances to fry them it will help use it up!
- Each one from this recipe will have FAT: 1.25g PRO: 2.35g CHO: 1.37g
