BUBBLY JELLY & SYLLABUB CREAM

Ingredients
- 33g Double cream
- 2g Hartleys Sugar Free Jelly crystals
- 2g Fresh lemon juice
- 7g Grapes
- Few Drops liquid sweetener
- 70mls sparkling mineral water or any SUGAR FREE drink (I used lemonade)
Instructions
- Dissolve the jelly crystals in 30 mls of boiling water, leave to go cold then just as the jelly starts to set carefully mix in the sparkling water / sugar free fizzy drink. With luck you will retain some of the bubbles!
- Pour into a pretty glass. Put in fridge.
- Whip the cream to soft peaks with the lemon juice and few drops of liquid sweetener.
- Put in fridge.
- When ready to serve top the jelly with the cream and decorate with grapes
- If you need to lower the carb amounts, replace grapes with berries such as blueberries, raspberries or strawberries. Sometimes a little lemon juice is allowed to be used freely on the diets – check with your dietitian.
