Ingredients
- 20g Ground almonds – MORRISONS
- 10g Coconut powder – EAST END or TRS
- 5g Dark chocolate - MORRISONS
- 15g Double cream - MORRISIONS
- 8g Butter
- 21g Eggs
- 8g Sugar free icing mix – NATVIA (available on line e.g. Amazon)
- You will also need ¼ teaspoon of BARKAT baking powder and some liquid sweetener.
Instructions
- Pre heat oven to 190 c / fan 170 c / gas 5.
- Reserve the cream, Natvia and chocolate.
- Soften the butter, then beat in the coconut powder, ground almonds, Barkat, sweetener and beaten egg.
- Place in mini muffin moulds and bake for approximately 12 minutes.
- When cold place in paper cases.
- Whip the cream with the Natvia icing mix and use to decorate the cakes with the chocolate.
