These are high fibre cupcakes.
This makes 2 cupcakes.
Each cupcake gives: 14.8g fat / 4.6g protein / 2.5g CHO
Ingredients
- 29g Eggs
- 20g Fibre flour – from fibreflour.org
- 29g Butter
- 6g Cocoa powder - BOURNVILLE
- You will also need a ¼ teaspoon (0.5g) BARKAT baking powder, some sweetener, either 1 – 2 teaspoons of liquid sweetener or 6 teaspoons of STEVIA granules and 25mls of water
Instructions
- Pre heat oven to 180c / fan 160c / gas 5.
- Mix together the flour, cocoa and Barkat.
- Soften the butter, then beat ALL the ingredients together until well mixed.
- Divide equally between two silicone cupcake cases and cook for approximately 12 – 15 minutes muffin mould.
- Cook in pre heated oven for approximately 15 minutes.
