CHOCOLATE MUFFIN with KETOCAL – NUT FREE

Ingredients
- 28g Butter
- 20g Cream, fresh, double
- 24g Ketocal 4:1 unflavoured
- 24g Eggs, whole, raw
- 18g Ultra Fine Fiberflour from Lonjevity Foods
- 4g Cocoa powder
Instructions
- You will also need 1/4 teaspoon of Barkat Baking powder and approx 1 teasp liquid sweetener
- Sift together the Fiiberflour, ketocal, Cocoa and baking powder
- Soften the butter then beat in ALL the ingredients
- Place in two prepared muffin moulds
- Cook in pre-heated oven 180c/Fan 160c/Gas 5 for approx 15 mins
- This recipe makes two snack portions Each one: fat: 26.55g pro: 5.70g cho: 2.25g
- Can be batched up and frozen
