Ingredients
- 21g Eggs, whole, raw
- 8g Butter
- 10g Macadamia Nuts Morrisons
- 5g Olive oil
- 12g Coconut Powder TRS or East End
- 15g Blueberries
- 8g Cream, fresh, double
Instructions
- You will also need a few drops of liquid sweetener or 5g of Truvia or Natvia granules and 2 drops Vanilla extract
- Grind the Macadamia nuts to a paste in a mortar and pestle or coffee grinder
- Heat oven 180c/Fan 160c/ Gas 5
- Reserve the blueberries
- Melt the butter
- Mix in ALL other ingredients
- Divide between 5 mini cupcake moulds
- Divide the blueberries equally between the cookies press them gently into the mixture. cut in half if they are large.
- Bake for approximately 12 mins
- They are nutty but moist!
- Can be batched up they will keep in the fridge for 3 or 4 days.
