PRETEND RICE PUDDING

Ingredients
- 25g Ricotta Cheese - MORRISONS
- 3g Flaxseed - LINWOODS
- 25g Butter
- 5g Desiccated Coconut
- 6g Toasted Soya Bran – HOLLAND & BARRETT
- 7g Clotted Cream
- 9g Bananas
- You will also need a pinch of grated nutmeg for flavour, liquid sweetener to taste and 4 tablespoons of boiling water
Instructions
- Put the flaxseed, coconut, soya bran and nutmeg in a bowl, pour on the boiling water and leave to stand for 5 minutes.
- Add the ricotta cheese and butter then microwave, stirring frequently in 6 second bursts, until HOT but NOT BOILING.
- If the mixture is too thick add more water, mix well adding sweetener to taste.
- The cooking time should be approximately one minute on high.
- Serve with cream and banana on top or stirred in.
