Notes
Mo’s tip: I made 5 nests, this made it easy to divide the cream in to 10g for each one.
If you colour the cream as well, then only whip until just thick because when you stir the colour in it thickens more as you can see by my photo! Still tastes good though. These meringues are crunchy right through.
Ingredients
- 32g Egg white
- 19g Blueberries – MORRISONS
- 50g Double cream – MORRISONS
- 30g NATVIA icing or SUKRIN icing
- You will also need a few drops of vanilla extract, a good pinch of cream of tartar a tiny pinch of salt and some purple food colouring.
Instructions
- Pre heat oven to 130c / fan 110c / gas 2.
- Reserve the cream and blueberries.
- WHISK all other ingredients together until stiff.
- Place on a non stick parchment on a baking tray in small nests.
- Cook for approximately 40 minutes, then turn off the oven and leave them until absolutely cold! - Overnight is good if you can.
- Serve with the cream (whipped) and blueberries.
