Notes
Two makes a meal.
One is ideal for a dessert or snack.
Ingredients
- 34g Double Cream Morrisons
- 8g Sunflower oil
- 20g Fiber Flour from Low carb Megastore
- 29g Eggs, whole, raw
- 2g Blueberries
- 3g Raspberries, raw
Instructions
- You will also need Some Josephs Sugar Free Maple Syrup to serve. Or any sugar free syrup of your choice
- Beat together the egg, cream & 20g of cold water
- Mix in the fibre flour and let it stand for a few mins
- Heat half oil in a small frying pan
- When it is hot (not too hot) pour in half of the batter leave it to cook until the mixture is set and browned then turn to cook the other side.
- Serve with the Syrup
- This makes two good size pancakes. I found by making two small ones they were easier to turn over
- It is best to cook on medium heat rather than very hot!
- Serves with Extra cream if more fat is required
