Spinach Omelette

Ingredients
- 14g Olive oil
- 10g Cheese Mature Cheddar
- 25g Cream, fresh, double
- 4g Butter
- 25g Potatoes, new and salad, boiled in salted water
- 20g Mushrooms, common, raw
- 30g Spinach, baby, raw
- 50g Eggs, whole, raw
Instructions
- Chop the spinach, mushroom and potato.
- Grate the cheese.
- Beat together the cream & egg.
- Heat the butter & oil together in a small frying pan.
- Fry the potato and mushroom till done.
- Add the spinach stir it in then pour over the egg mixture you can add a little seasoning if required.
- Sprinkle over the cheese cook gently till the egg is set & the cheese is melted.
- You can just fold it over to serve or you can brown it under a hot grill if you prefer it well done!
