Mo’s tip: This meal will suit both keto and non-keto diners. It is also easy to adjust portions if half the quantity does not fit the required keto ratio.
You can use meat of your choice, I used rib-eye steak for flavour and
tenderness, you may prefer pork or lamb, but the values will need adjusting.
Ingredients
- 56g Salad of spinach, rocket, red chard – MORRISONS PREPARED
- 150g Celeriac
- 30g Mayonnaise - HELLMANS
- 100g Scottish smoked salmon – MORRISONS SIGNATURE
- 36g Bread - HOVIS LOWER CARB SEEDED
- 30g Cucumber
- 6g Butter
- 10g Vegetable oil
- 275g Rib-eye beef steak
Instructions
- You will need to pre-boil the celeriac, drain well and leave to go cold before weighing it.
- You will also need seasoning and dried herbs.
- Starter: Arrange the smoked salmon equally on to two plates with the sliced cucumber and buttered bread. Season with black pepper.
- Main course: Before you have your starter, marinate the steak in the oil with seasoning or dried herbs of your choice. Mix the cooked celeriac with the mayonnaise to make a ‘potato style’ salad. A good pinch of dried chives is nice with this. When ready fry the steak for a few minutes each side depending on how you like it, then cover with foil and leave to rest for at least 5 minutes. Serve with the prepared salad. If you cut the steak into strips it makes it easy to weigh out if needed.
- Optional dessert / treat: I suggest the recipe for fruit hearts (see separate recipe page), which are shown in the photo. You can make these up to 3 days in advance and choose either to share one or have one each depending on your allowance. You may prefer a different dessert. Whichever dessert you choose the values must be added to the ones shown here for the first 2 courses.
