Mo’s tip: If you are using frozen fruit, defrost before you add the sweetener,
100g of jam gives: 0.90g protein / 5.1g CHO
Ingredients
- 250g Blackberries
- 40g NATVIA sweetener or TRUVIA granules
- You will also need 40mls of water and 1 teaspoon of xanthan gum
Instructions
- Wash the blackberries and leave to drain well.
- Put the blackberries, water and sweetener in a small saucepan and stir until simmering, crush the fruit, a potato masher makes this easy.
- Simmer for a few more minutes, stirring all the time.
- If you think it needs to be sweeter at this stage, you can add a few drew drops of liquid sweetener.
- Gradually sprinkle in the xanthan gum, stir well and cook for another 1 – 2 minutes, ½ a teaspoon gives a softer set.
- When cool place in a glass container with a good fitting lid.
- This needs to be stored in the fridge.
