WILD BLACKBERRY JAM

Notes

Mo’s tip: If you are using frozen fruit, defrost before you add the sweetener,
100g of jam gives: 0.90g protein / 5.1g CHO

Ingredients

  • 250g Blackberries
  • 40g NATVIA sweetener or TRUVIA granules
  • You will also need 40mls of water and 1 teaspoon of xanthan gum

Instructions

  1. Wash the blackberries and leave to drain well.
  2. Put the blackberries, water and sweetener in a small saucepan and stir until simmering, crush the fruit, a potato masher makes this easy.
  3. Simmer for a few more minutes, stirring all the time.
  4. If you think it needs to be sweeter at this stage, you can add a few drew drops of liquid sweetener.
  5. Gradually sprinkle in the xanthan gum, stir well and cook for another 1 – 2 minutes, Β½ a teaspoon gives a softer set.
  6. When cool place in a glass container with a good fitting lid.
  7. This needs to be stored in the fridge.

Our Val had a wonderful time at the HOPE for Epilepsy support session yesterday, chatting all things Ketogenic Diet for epilepsy!
