Mo’s tip: You can use any meat you prefer. You can use any vegetables if peppers are not favourite, but you will have to adjust the values. Avocado is a good addition if you need to get more fat in.
You can batch up the wraps, they freeze well.
To reduce the carb content, you could replace the wrap with iceberg or romaine lettuce leaves.
Ingredients
- 4g Psyllium husk
- 20g Ultra fine fiberflour – LONJEVITY FOODS
- 50g Beef rump steak
- 10g Red capsicum pepper
- 10g Yellow capsicum pepper
- 10g Green capsicum pepper
- 15g Onion
- 20g Corn oil
- 6g Olive oil
- 10g Mayonnaise – HELLMANN’S
- You will also need 4g of GIA garlic paste, seasoning, vinegar or lemon juice, some dried herbs and water.
Instructions
- First make the wraps and dressing, these can be made in advance:
- Mix the fiberflour with the psyllium husk and stir in 4g of the olive oil and a pinch of salt and pepper.
- Add enough warm water required to make a stiff dough, if will be approximately 40mls, knead well. Leave it to rest for at least 10 minutes – longer will not matter.
- When required roll into a 16cm round, it needs to be thin.
- Heat a strong based frying pan and cook the tortilla for 2 minutes on each side.
- To make the dressing:
- Mix the mayonnaise with a good pinch of dried herbs of your choice and the remaining 2g of olive oil. You could add a little garlic paste for added flavour. Mix well and set aside in the fridge.
- To make the filling:
- First cut the steak into strips and mix ½ teaspoon of vinegar or lemon juice and a little GIA garlic paste, set aside to marinate for at least 20 minutes.
- Cut the peppers into even sized strips, not too thin!! Slice the onion. Heat 15m of the oil into a sturdy frying pan.
- DRY the meat on some kitchen roll then add to the hot oil, sear the meat for approximately 2 minutes, set aside in a warm place – do not cover it.
- Add the remaining oil to the pan, when it is hot add the vegetables and sear until they are just tender, but try and get a nice charred look.
- To serve add the meat and vegetables to the wrap. Drizzle with the dressing.
