VEGETARIAN BBQ TOFU WITH COURGETTE

Notes
Mo’s tip: If you are not having a BBQ this can be cooked well in the kitchen using a
griddle pan or small frying pan.
Ingredients
- 100g Tofu – CAULDRON BRAND
- 60g Courgette
- 8g Soy sauce – LIGHT AMOY
- 3g Sukrin gold
- 4g Sesame oil
- 5g Vegetable oil
- 14g Mayonnaise – HELLMANN’S VEGAN
- You will also need a good pinch of ground ginger.
Instructions
- Drain the tofu and wrap in kitchen roll for as long as you can to get it as dry as possible, applying pressure helps!! Then weigh it.
- Mix together the soy sauce, Sukrin gold, ginger and half of the sesame oil.
- Cut the tofu into two thick slices.
- Coat the tofu in the soy sauce mixture and leave in the fridge until you are ready to cook it and the marinade has been absorbed.
- Cut the courgette in long slices and coat with the remaining sesame oil and vegetable oil.
- Cook the courgette on the BBQ until they are tender and browned, keep in a warm place.
- Add the tofu to the BBQ and cook for approximately 5 minutes, turning them until they are browned on both sides.
- Drizzle the tofu with any remaining oil and serve with the courgette and mayonnaise as dip.
