Mo’s tip: This can be eaten hot or cold, so makes a good packed lunch or side dish to meat cooked on a BBQ.
Fresh mint is also very nice with this dish if you don’t like basil.
Ingredients
- 60g Cauliflower
- 25g Leeks
- 30g Olive oil
- 15g Green olives in brine (drained)
- 3g Basil
- 12g Pine nuts
Instructions
- You will also need 1g of turmeric dissolved in 25mls of hot water and some seasoning.
- Make ‘rice’ by grating the cauliflower florets, then weigh them.
- Slice the leeks and fry gently in the olive oil for a minute, then add the cauliflower and continue frying for another minute.
- Add enough of the turmeric water to create steam and continue cooking until the cauliflower is cooked a little but not too soft.
- Add the sliced olives and pine nuts then remove from the heat and stir in the chopped basil.
