Mo’s tip: You can use other fillings. Spinach and cheese is nice, as is ham and cheese. You will need to adjust the values.
Ingredients
- 50g Eggs
- 14g Double cream - MORRISONS
- 10g Sunflower oil
- 20g Ultra fine fiberflour – LONJEVITY FOODS
- 25g Mature cheddar cheese
- 35g Mushrooms
- 12g Butter
- You will also need some seasoning and cold water
Instructions
- Chop the mushrooms and grate the cheese finely before weighing.
- Beat together the egg, the cream and 30mls of cold water
- Mix in the fiberflour with a good pinch of salt and let it stand for a few minutes.
- Heat the butter in a small frying pan and fry the mushrooms for a few minutes, then set aside.
- Heat the oil in a medium frying pan, pour in the batter and leave to cook until browned, then turn over and place the grated cheese and mushrooms over the top.
- Cook until the cheese starts to melt.
- Fold in half and serve on a warm plate.
