Notes

Mo’s tip: Divide the total recipe by the number you make, this will make it easier to calculate the values of each biscuit once you have added the toppings. I made 6 biscuits using a 6cm cutter, for the ham star I used a 5.5cm cutter and for the cheese star I used a 3.5cm cutter. I used Morrisons thin cut ham, if you use a thicker ham you will need to adjust the values after weighing. The biscuits will keep in an airtight container for up to 3 days, just add the topping when needed. Each one is only 0.34g of carbs making them good party treats for both keto and non keto family members. I made 6 each biscuit gives: 6.96g fat / 2.18g protein / 0.34g CHO

Ingredients

  • 24g Butter
  • 12g Mature cheddar cheese – finely grated
  • 7g Ground almonds
  • 28g Golden milled flaxseed – DHILLONS FLOUR MILL
  • 10g Cheese slices – DAIRYLEA
  • 10g Ham
  • You will also need some seasoning.
  • Reserve 8g butter, ham and Dairylea slices.
  • Start by making the biscuits:

Instructions

  1. Pre heat oven to 180c / fan 160c / gas 5.
  2. Mix together the flaxseed flour, ground almonds and a tiny pinch of salt, rub in 16g of butter.
  3. Stir in the FINELY grated cheese.
  4. Mix to a dough with approximately 2 teaspoons of cold water.
  5. Roll out evenly, not too thin, between 2 pieces of parchment paper.
  6. Shape as preferred, cook for approximately 10 minutes, leave to cool on a wire rack.
  7. When ready to serve, cut stars out of the ham and cheese slices then weigh them. One slightly smaller than the other looks good on the biscuit.
  8. Using the reserved butter, spread on the biscuits, dividing equally between the number of biscuits you have made.
  9. Add the ham star first then top with the cheese star
