APPLE CAKES

Ingredients
- 13g Coconut Powder
- 31g Apples, cooking, raw, peeled
- 21g Butter
- 6g Ground Almonds
- 15g Eggs, whole, raw
- 8g Alpro Soya Light
- 1g Olive oil
Instructions
- You will also need 1/4teap of BARKAT baking powder and some liquid sweetener & a pinch of cinnamon.
- Mix together the coconut Powder, ground almonds & baking powder plus a pinch of cinnamon if desired.
- Gently melt the butter.
- Bet the egg with the olive oil and a few drops of sweetener.
- Chop the apple quite small or grate it.
- Mix everything together.
- Place in silicone muffin cases. You can make mini snack-size ones. I made 6
- Bake for 15-20 mins depending on size.
- Serve either warm or cold.
- If you don't want to use Alpro light water will be ok.
