HOT CROSS BUN with MCT

Ingredients
- 16g Flour Self Raising McDougalls
- 6g Butter
- 4g Raisins
- 6g Coconut Flour TIANA
- 18g MCT oil
- 52g Eggs, whole, raw
Instructions
- You will also need a good pinch of mixed spice or cinnamon and some liquid Sweetener (approx 1/4 teasp)
- Reserve butter
- Chop the raisins & soak in a little warm water to plump them up
- Mix with the flour & Coconut flour (TIANA)
- Add Mixed spice & Sweetener
- Beat egg add to the flour mix with the MCT oil & raisins
- Bake in a muffin or cupcake mould in preheated oven 190c/170c Fan/Gas 6 for approx 10-12 mins
- Use the butter to make a cross or simply cut it in half and spread with butter
- I turned the bun upside down which gave a nice surface for the cross
