Can be served with cream for extra fat.
If preferred you could make one larger pie.
I bought the fibre flour online, but there are various outlets that sell it.
Ingredients
- 22g Fibre flour β www.fiberflour.org
- 11g Butter
- 10g Raspberries
- You will also need a little cold water and some sweetener.
Instructions
- Pre heat oven to 180c / fan 160c / gas 5
- Rub the butter in to the flour.
- Mix to a dough with a few drops of cold water.
- Roll out between 2 sheets of cling film and use 2/3βs of it to line two mini muffin tins.
- Divide the raspberry equally and add the sweetener of your choice to taste.
- Make lids with remaining pastry.
- Cook for approximately 15 β 20 minutes in pre heated oven.
