CHRISTMAS PUDDING WITH MCT OIL

Ingredients
- 16g Double Cream Morrisons
- 45g Eggs, whole, raw
- 9g Ground Almonds Morrisons
- 20g MCT oil
- 2g Psyllium Husk
- 14g Ultra Fine Fiberflour from Lonjevity Foods
- 6g Raisins
- 6g Sultanas
Instructions
- You will also need 8g of Sukrin Gold Sweetener or 1/2 teasp of liquid Sweetener & 1/2 teasp of mixed spice or cinnamon
- Reserve the cream
- Chop the sultanas and raisins
- Oil a small pudding basin
- Beat egg & MCT oil together
- Stir in all remaining ingredients mix together well
- Place in basin cover with foil and steam or boil for 35 mins
- Serve with the lightly whipped cream.
- This is a filling pudding and would easily make two portions.
