Notes

Mo’s tip: You can serve in mini cake cases. They will keep for several days in a cool place. There is no need to refrigerate. I used a cocktail stick to help hold the puddings whilst coating with chocolate then stuck them into half a potato to keep them upright in the fridge.
You should aim to get at least 5 treats from this, then you will have: 5.64g fat / 1.72g protein / 1.91g CHO

Ingredients

  • 100g Sugar free marzipan - SUKRIN
  • 4g Cocoa dark supreme – LINDT 90%
  • 5g Cacao butter – GREEN ORIGINS ORGANIC
  • 25g Icing sweetener - PURESWEET
  • You will also need some holly and berry sprinkles and a little food colouring (optional).

Instructions

  1. Start by making shapes you prefer, I made snowmen and Christmas puddings.
  2. Roll the marzipan into small balls. For the snowmen you will need to shape the head, it is best done in one piece as it gets around the problem of fixing a head to the body.
  3. Dust the snowmen with the ICING sweetener, you could mix it with a little water and spread over the snowman, but I found it easier to dust them. Make eyes and buttons with a little colouring or a few dots of melted chocolate left over from the puddings.
  4. For the Christmas puddings, melt the cacao and Lindt chocolate together over hot water, leave to cool but do not let set.
  5. Cover the Christmas pudding ball with the chocolate and leave to set in the fridge.
  6. For the Christmas pudding you will need a little more of the Puresweet icing mixed with water to make a stiff icing, then use it to top the pudding. I used holly berry sprinkles to decorate.
