MARZIPAN CHRISTMAS TREATS

Notes

Mo’s tip: These will keep well and do not need refrigeration. If you want to colour the marzipan this is best done at stage 2, just divide the marzipan and colour each piece by kneading it into the paste.
Easy to give as treats at Christmas.
I made 12 pieces, so could be used for a 12 days of Christmas treat for marzipan lovers!!
If you make 12 pieces each one will have: 2.32g fat / 0.87g protein / 0.28g CHO

Ingredients

  • 50g Ground almonds
  • 43g Icing sweetener – SUKRIN or PURESWEET (or one of your choice, preferably one that is 1:1 sweetness of sugar)

Instructions

  1. You will also need 3g almond extract, 1g vanilla extract, approximately 10g of cold water and some food colouring / spray).
  2. Place the ground almonds and icing sweetener in a bowl – you may need to sieve the icing sweetener.
  3. Add the almond and vanilla extract with 3g of the water, mix for a second or two then add more water, a few drops at a time until you get a smooth dough, as soon as this happens knead gently on a work surface.
  4. Wrap in cling film and place in the fridge for 2 hours.
  5. Use to make marzipan sweets using mini cutters or shape by hand.
  6. Leave at room temperature to dry, best left overnight.
  7. When ready, decorate as desired using food colouring and glitter spray.
