MICROWAVE CHEESE AND SPINACH OMELETTE

Ingredients
- 105g Eggs
- 15g Double cream
- 11g Mature cheddar cheese
- 14g Spinach
- 2g Vegetable oil
- You will also need some salt and pepper to taste.
Instructions
- Chop the spinach and toss in the oil.
- Grate the cheese and then weigh it.
- Place the spinach in a suitable microwave safe dish.
- Mix together the cheese, eggs, cream and seasoning, pour it over the spinach and mix well.
- Cook for 30 seconds in the microwave set on high.
- Give the mixture a good stir, then cook for a further 80 seconds.
- If not cooked through, put it back in for another 10 seconds.
- Serve hot.
