Mo’s tip: You can use a GRANULAR sweetener of your choice, I used STEVIO because it is 1:1 of sweetener with sugar. If the one you use is a lot sweeter, then you will need to use less, but for baking I find 1:1 gives a better result. Divide the chocolates evenly, I made 20 small ones to allow for 2 per portion. When cut into 10 even sized portions it will give: 34.2g fat / 7.4g protein / 2.68g CHO
Ingredients
- 250g Butter
- 200g Eggs
- 150g Ground almonds
- 50g Ultra fine fiberflour – LONJEVITY FOODS
- 2g Lemon peel – FINELY GRATED
- 48g Cocoa dark supreme – LINDT 90%
- 10g Double cream
- 20g Fresh lemon juice
- 5g Desiccated coconut
- 100g Granular sweetener
- 50g SUKRIN or STEVIO (PURESWEET) icing sweetener
- You will also need 1 teaspoon of LOW CARB GLUTEN FREE baking powder and green food colouring
Instructions
- Pre heat oven to 180c / fan 160c / gas 5
- Reserve 50g butter, 48g LINDT chocolate, 10g lemon JUICE and ICING sweetener.
- Mix together 150g ground almonds, ultra fine fiberflour and the baking powder.
- Soften 200g butter, beat in the GRANULAR sweetener, then add the flour mixture with the 10g of lemon juice.
- Whisk the egg until light and frothy, then beat into the mixture with the lemon zest.
- Place in a greased and lined 7 inch / 18cm cake tin and cook for approximately 35 minutes until cooked through.
- Make the little chocolates by melting the LINDT and cream in a bowl over hot water, do not let the chocolate get too hot! Pour into little moulds of your choice and leave to set in the fridge. This can be done the day before.
- When the cake is cold make the butter icing by beating the 50g reserved butter and ICING sweetener with the lemon juice until soft and fluffy. You can spread it on top or pipe it. Add a little green colouring to the coconut and sprinkle over the cake. Add the chocolates. (I tried to make mine look like a nest of eggs for Easter).
