Mo’s tip: Good for batching and freezing.
This makes 2 medium buns; you could make 3 snack size from the mixture.
A sweetener of your choice can be used in place of SUKRIN GOLD, but it does add to the colour and flavour of the buns.
TRUVIA BROWN is also good for this.
Ingredients
- 10g Butter
- 20g MCT oil
- 8g Raisins
- 50g Eggs
- 27g Soya flour – BWFO BRAND
- 12g Sweetener - SUKRIN GOLD
- You will also need 1g of mixed spice or cinnamon and 2g LOW CARB GLUTEN FREE baking powder.
Instructions
- Pre heat oven to 190c / fan 170c / gas 6
- Reserve the butter.
- Mix together the soya flour, spice and baking powder.
- Chop the raisins and stir into the flour.
- Beat together the MCT oil, egg, and SUKRIN GOLD sweetener.
- Mix into the dry ingredients, beat well.
- Put into 2 lightly greased muffin moulds, leave to stand for 2 or 3 minutes.
- Bake for approximately 15 minutes.
- Serve cut in half and spread with the butter
