Mince pies

Mo’s tip: I made 4 mini pies, but you could make 2 normal sizes in patty tins. This makes them easy to be snacks/treats.
Ingredients
- 12g Butter
- 9g Ground almonds – MORRISONS
- 2g Shredded suet – ATORA
- 20g Coconut powder – TRS or EAST END
- 3g Sultanas
- 14g Eggs
- 11g Cooking apples
- You will also need 5g of SUKRIN GOLD sweetener (or sweetener of choice) and some mixed spice.
Instructions
- Pre heat oven to 180c / fan 160c / gas 5.
- Make the pastry by rubbing the butter into the coconut powder and ground almonds.
- Mix to a dough with the egg but keep approximately 1g for brushing the top.
- Leave to rest in a cool place.
- Finely chop the apple and sultanas, mix in the suet, mixed spice and sweetener.
- Line MINI muffin moulds or patty tins with half the pastry (you will find it easier just to push it in rather than trying to roll it).
- Fill each one equally with the apple mix.
- Top with the remaining pastry (just form little tops with your fingers).
- Brush with the saved egg.
- Bake in preheated oven for approximately 15 minutes.
- If you make 4 pies, each one will give: 7.57g fat / 1.25g protein / 1.31g CHO
