Ingredients
- 24g Coconut powder β EAST END or TRS
- 19g Eggs
- 19g Butter
- 4g Raisins
- 9g ALPRO soya light
- You will also need ΒΌ teaspoon each of mixed spice, BARKAT baking powder (or TESCO carb free baking powder) and TRUVIA granules (or you can use a squirt of liquid
- sweetener).
Instructions
- Pre heat oven to 190c / fan 170c / gas 5.
- Put 9g of the butter to one side.
- Chop the raisins, this helps to distribute them.
- Soften the 10g of butter and then mix everything together.
- Put in lightly greased muffin mould. You can either make one large or two snack size by dividing to equal weight.
- Cook snack size for approximately 10 β 12 minutes, the larger one will take 15 minutes.
- When cool make crosses with the reserved butter, or simply spread with the butter if preferred.
