PANCAKES using LIQUIGEN

Serve drizzled with sugar free syrup of your choice.
This batter is not very flexible and may tend to break but it does make a tasty pancake!
I used sunflower oil but you can use any oil of your choice you only need to lightly oil the pan
Ingredients
- 25g Eggs, whole, raw
- 20g Liquigen
- 15g Ultra Fine Fiberflour from Lonjevity Foods
- 1g Oil, sunflower
- 15g Alpro Light
Instructions
- You will also need some DaVinci sugar free syrup or Josephs sugar free Maple Syrup
- Beat the egg into the Alpro Light with the liquigen then add the fibreflour and beat well. Add a little more Alpro if it is too thick.
- Leave the batter to stand for approx 10 mins
- Grease a small frying pan with the oil
- Pour in the batter you may need to help it spread. Cook on both sides for a few mins.
- Place on a warm serving plate.
