COCONUT CUPCAKES Vegan

Ingredients
- 19g Vitalite Dairy Free Spread
- 3g Egg replacement ORGRAN
- 6g Coconut, desiccated
- 30g Coconut Powder TRS or East End
Instructions
- You will also need a few drops of liquid sweetener/ 1/4 teaspoon Barkat Baking Powder and 2 tablespoons of water
- Pre-heat oven to 180c/Fan 160c/Gas 5
- Mix the Egg Replacement with the water
- Mix the Coconut powder, desiccated coconut & Barkat together
- Beat in the egg replacement and sweetener. Mix till well combined
- Place in two cupcake moulds and cook for approx 15 - 20mins
- One cupcake makes a good snack or dessert
- The desicated coconut adds texture if preferred you could omit it and increase the coconut powder to 36g
