This pastry can be used to make sweet or savoury pies, sausage rolls, the base for quiches and pizzas.
I found that rolling between baking parchment makes it easy, it rolls well and does not crumble.
Ingredients
- 17g Double cream - MORRISONS
- 30g Eggs
- 43g Golden omega milled flaxseed β VIRGINIA HARVEST
- 125g Italian mozzarella β MORRISONS
- 8g Psyllium husk
Instructions
- You will also need a tiny pinch of salt.
- When using fresh mozzarella make sure you drain it on kitchen roll first.
- Melt the mozzarella in a microwave for 30 seconds, stir and then melt for a further 30 seconds, it will become milky.
- Beat in ALL other ingredients until a dough is formed. Be patient it does form a dough after a minute or two.
