Moβs tip: This recipe will make two snack portions that helps get some fibre in the diet when it is needed. The jelly part can be made and stored in the fridge for up to 5 days, just top with the cream and chocolate when needed. You can use a preferred oil, I chose walnut for its flavour. In place of clotted cream you could use double cream which would need whipping until thick, but you would lose 5g of fat from the values.
Ingredients
- 28g Mandarin oranges in juice β PRINCES
- 38g Clotted cream
- 8g Golden omega milled flaxseed β VIRGINIA HARVEST
- 2g Cocoa dark supreme β LINDT 90%
- 3g Walnut oil
- You will also need 2g of HARTLEYβS orange sugar free jelly crystals
Instructions
- Start by soaking the flaxseed in 50mls of water for at least 20 minutes, the longer the better.
- Dissolve the sugar free orange crystals in 70mls of HOT water.
- Chop the drained mandarin oranges before weighing.
- While the jelly is hot stir in the soaked flaxseed and walnut oil, leave to cool.
- Stir in the mandarin oranges and put in to a serving dish to set.
- Top the jelly with the clotted cream.
- Decorate with grated chocolate.
