Mo’s tip: I used WHITE vinegar - you can use any WHITE vinegar. They are very low carb so could be useful for snacks and side dish. Good to mop up gravy and sauces.
Ingredients
- 60g Eggs
- 2g Coconut flour - TIANA
- 2g Psyllium husk
- 4g Vegetable oil
- 3g Vinegar
- 1g Baking powder – low carb, gluten free
- You will also need a pinch of salt, a little oil and a ramekin or suitable dish that is microwavable, lightly oiled.
Instructions
- In a jug, beat the egg well.
- Add all the remaining ingredients and beat well.
- Place in the prepared ramekin dish, cook in microwave for approximately 90 seconds, this may vary according to the power of your microwave. After 90 seconds, pop back in for a few more seconds if required, until it looks risen and firm.
- Turn out onto a cooling rack, then if you have batched up, you can wrap when they are cold and keep in the fridge.
- To serve cut in half though the middle, then pop under the grill to toast, just toast the uncut side as this prevents it from becoming too dry.
- Spread with butter whilst warm.
