Moβs tip: I made 4 mini pies, but you could make 2 normal size in patty tins.
This makes them easy to be snacks or treats.
Easy to batch up and freeze.
If you make 4 pies each one will give: 7.15g fat / 1.22g protein / 0.96g CHO
Ingredients
- 12g Butter
- 21g Cooking apples β peeled, flesh only
- 20g Coconut powder β TRS or EAST END
- 14g Eggs
- 9g Ground almonds - MORRISONS
- 5g Sweetener of your choice β I used SUKRIN GOLD
- You will also need some mixed spice or ground ginger
Instructions
- Pre heat oven to 180c / fan 160c / gas 5
- Make the pastry by rubbing the butter into the coconut powder and ground almonds.
- Mix to a dough with the egg, leave to rest in a cool place.
- Finely chop the apple, mix in the spice and sweetener.
- Line MINI muffin moulds or patty tins with half the pastry, (you will find it easier just to push in rather than trying to roll it).
- Fill each one equally with the apple mix.
- Top with the remainder of the pasty β just form little tops with your fingers
- Brush with a little egg and bake for 15 minutes.
