Mo’s tip: If putting into a lunch box spread butter on to one and top with another to make a biscuit ‘sandwich’.
Ingredients
- 3g Olive oil
- 4g Oatbran Fine Cut White's from Holland & Barrett
- 22g Macadamia Nuts Morrisons
- 13g Butter
- 6g Cheese Mature Cheddar
- 4g Eggs, chicken, white, raw
- 1g Psyllium Husk
Instructions
- You will also need a pinch of salt or mustard powder.
- Reserve Butter
- GRIND nuts to a paste I found that doing this in a pestle & mortar easier than a processor or coffee grinder.
- FINELY grate the cheese then weigh it
- Mix with the psyllium husk, Oatbran. egg white and oil
- Drop small spoonfuls on to parchment or silicone lined baking tray and flatten to shape.
- cook in pre-heated oven 160c/140cFan/gas 3 for approx 15mins till golden & crisp
- Makes 6 medium or 8 diddy ones
- Serve spread with butter
