WALNUT MUFFINS

Ingredients
- 3g Walnuts, kernel only
- 6g Ground Almonds
- 13g Butter
- 12g Olive oil
- 7g Ultra Fine Fiberflour from Lonjevity Foods
- 13g Eggs, whole, raw
- 7g Golden Omega Milled Flaxseed (Virginia Harvest)
Instructions
- You will also need 1/4 teaspoon Barkat Baking powder, a drop of vanilla extract and a few drops of liquid sweetener to taste
- Pre-heat oven to 180c/ Fan 160c/ Gas 5
- Chop the walnuts
- Soften the butter add all the dry ingredients add in the oil and mix well
- Beat the egg and add to the mixture with the vanilla and sweetener
- Put into a muffin mould
- Cook for approx 15 mins cool for a few minutes before turning out
- This recipe is High Fat, High Fibre low carb!
