CHOCOLATE CHIP CUPCAKES with Liquigen

Ingredients
- 20g Liquigen
- 8g Coconut Flour TIANA
- 46g Eggs, whole, raw
- 3g Cocoa powder
- 7g Ultra Fine Fiberflour from Lonjevity Foods
- 4g Dark Chocolate Chips Waitrose
Instructions
- You will also need 1g teasp Barkat Baking 1/2 Teasp Liquid
- Sweetener & a few drops vanilla extract
- RESERVE the Chocolate Chips
- Mix together the fiberflour, Coconut flour, Cocoa & barkat
- Beat egg with the Liquigen then add to the dry ingredients. Mix well.
- Place in 6 mini cupcake moulds or two larger ones
- Then ADD the reserved chocolate chips divide equally between the cupcakes
- Cook in pre-heated oven 180c/ Fan 160c/ Gas 5 for approx 10 -15mins depending on the size
- These will batch up & Freeze well.
