Iced Cupcakes with MCTProcal

Ingredients
- 7g Butter
- 35g Eggs, whole, raw
- 29g MCTprocal
- 13g Ultra Fine Fiberflour from Lonjevity Foods
Instructions
- You will also need 1/2- 1 teasp liquid sweetener. 3g Barkat Baking powder & Some Natvia or Sukrin Icing sweetener
- Pre-heat oven to 180c/Fan 160c/Gas 4
- RESERVE the icing sweetener
- Soften the butter then mix everything together.
- Place in silicone cupcake moulds
- This makes 2 good sized cakes
- Cook for approx 15- 20 mins
- When cold mix the icing with a few drops of water, a little colouring mix to a thickish consistency and place on top of cakes. This is optional they are fine left plain
- This makes 8 mini cakes which are useful for snack/treats
