BANANA MUFFIN with MCT oil

Ingredients
- 18g Bananas, flesh only
- 34g Eggs, whole, raw
- 20g MCT oil
- 12g Ground Almonds
- 10g Ultra Fine Fiberflour from Lonjevity Foods
Instructions
- You will also need a few drops of liquid sweetener or a teaspoon of Da Vinci banana syrup and 1/8 teaspoon Barkat baking powder
- Preheat oven to 180c/Fan 160c/Gas 5
- Mash the banana (use ripe ones)
- Mix the ground almonds, fiberflour and barkat together
- Beat ALL ingredients together with the egg and sweetener
- Place in two lightly oiled muffin moulds bake for approx 20 minutes
- Good for batching and freezing
