Ingredients
- 11g Butter
- 2g Cocoa powder
- 3g Dark chocolate chips - WAITROSE
- 24g Eggs
- 20g Coconut powder β TRS or EAST END
- 2g Cornflour
- You will also need 1g of BARKAT baking powder, 8g TRUVIA granular sweetener and 2 drops of vanilla extract.
Instructions
- Pre heat oven to 180c / fan 160c / gas 5
- Reserve the chocolate chips.
- Soften the butter then beat in the sweetener.
- Mix together the coconut powder, cornflour, cocoa and baking powder.
- Stir into the butter with the beaten egg, mix well, it will thicken as you beat.
- Place in 6 mini cupcake moulds or two larger ones, then ADD the reserved chocolate chips divided equally between the cupcakes.
- Cook in a pre heated oven for approximately10 β 15 minutes depending on the size.
