MO’s COCONUT MACAROON SNACK

Mo’s tip: Could be served with a small helping of sugar free jelly and cream as a dessert.
Ingredients
- 19g Desiccated coconut
- 13g Egg white
- 1g Cornflour
- You will also need 2g NATVIA sugar free icing mix (available on line e.g. Amazon) or 1g of TRUVIA granules.
Instructions
- Pre heat oven to 170 c / fan 150 c / gas 3-4.
- Whisk the egg white until stiff but not dry and then whisk in the Natvia or Truvia.
- Fold in the coconut.
- Place in mini muffin moulds either lightly oiled or with a disc of non-stick parchment in the base.
- Bake for approximately 12 minutes.
- This makes 5 mini macaroons, each macaroon is: Fat: 2.35g Pro: 0.49g Cho: 0.42g
